Spaghetti with fried courgettes

Spaghetti con zucchine fritte.

Ingredients:

    • 500g / 1LB spaghetti
    • 4 courgettes ( zucchine )
    • 2 cloves of garlic
    • Salted ricotta cheese
    • Salt
    • Pepper
    • Olive oil

Preparation: (40 minutes)

Cut the courgettes into rings and fry in hot oil which has been flavored with 2 cloves of garlic, remove when golden. Boil the spaghetti, drain while still resistant to the tooth and turn into a bowl. Dress with the courgettes and the frying oil. Pass pepper and some grated ricotta cheese round separately.

This is a classic summer dish, especially in the Catania area.
